renders don’t go down
well with bar owners.

But catching the profits
being poured out isn’t easy.

help prevent what the com-
pany calls shrinkage

The term refers to the
theft, overpouring, and waste
that reduce bar and restau-
rant profits.

“There's always a way to
steal. This system gets rid of
99% of those ways,” said
Durkin.

And sometimes the bar-
tenders who are doing the
cheating.

Raven suffered significant
shortages on liquor and beer.

When Foster alerted staff
that Bevinco was on the case,
shortages shrunk to a still
unacceptable 7%. A couple of
one-day audits revealed who
was responsible for the
shrinkage. The bartender was
fired.

David Feller, the owner of
the Raven, said that with
Bevinco’s monitoring, short-
ages remain under 1%.

“I don’t have to spend
time checking up on our bar-
tenders and I can trust my
staff each night when I leave
the pub or have a day off,”
said Felier.

average an expensive 20% of
liquor inventory in the hospi-
tality industry, leading to
lower profits or owners and
higher prices for consumers.
