Corn Fritters (makes about 18)
1 cup kernel corn (the best is fresh,
cob corn. High quslity frozen
works and drained, Niblets, too)
Legg yolk, lightly beaten
2 tablespoons flour
% teaspoon baking powder
1 egg white, stiffly beaten
vegetable oil for frying
salt and pepper

Combine corn with egg yolk,
flour, baking powder and mix
weil. Fold in egg white. Fry until
golden on both sides in oil.
Sprinkle lightly with salt and pep-
per. These can be done pancake

size but I do them by table-
spoonfuls.
