Green food coloring
Ys cup light rum
Ys cup sugar
Sweetened whipped cream
Combine gelatine, %4 cup
sugar and salt in the top of a
double boiler. Add egg
yolks, water and lime juice
and beat with hand mixer
until well blended, Cook
over boiling water until mix-
ture thickens and will coat
the back of a silver spoon.
Remove from heat and
add rind and food coloring
until it’s a pretty, medium
green.
Cool and add sun. Retur
to fridge until it’s the cor

¥% cup sugar
¥2 teaspoon salt
3 eggs, separated
Y% cup water
