In fact, over the years, it has gained a reputation as a “fattening”, and, therefore, a forbidden, dish. Recently, however, nutritionists have been re- examining these food prejudices in the light of current nutritional knowledge. What they have discovered is that pasta is a food low in fat, high in complex carbohydrates that we're being recommended to add to our diets, and a relatively good source of protein. Eaten in proper serving sizes, it can be a Satisfying addition to any weight loss or maintenance diet. Although most people think of pasta as an Italian dish, the legend is that it originated in China in 5,000 B.C. Supposedly, it was brought to Italy by Marco Polo in the late 13th centruy, but historians place its arrival via merchant traders a little earlier than that. However they en- countered it, Italians were quick to adopt this new food and, by mating it to their own thick tomato sauces, cheeses and seafood, make it uniquely their own. Pasta is made from semolina, the heart of durum wheat. In the pasta-making process, the semolina is mixed with water and then kneaded into dough. The dough is then forced through metal forms to produce a characteristic shape. The dough is sliced, then dried (but not baked) in drying ovens. Spinach or tomatoes may be added to the dough to. produce striking red or green colored pastas. Cooked per request, but “al dente” by the knowing, in a restaurant or in_ the consumer's kitchen, it then becomes the familiar dish we all know and love.
