then. It is a lovely light change to
traditionally heavy Christmas
desserts.

For unknown reasons, I have
been informed that a mincemeat tri-
fle is called Spotted Dick in
England, You may prefer to Create a
conversation piece as well as a trifle
by introducing it as such.

Custard: ©

%c. custard powder
Xe. white sugar

4c. milk

1 tsp. real ‘vanilla

Combine in heavy saucepan
sugar and custard powder. Whisking
constantly, add milk and vanilla.

Stir until thick and creamy,
adjusting burner temperature if nec-
essary.

When done, place a round of
wax paper right on top of custard.
Cover and cool outside.

The sampled Mozza was very
good.

And while The End's wine list
is limited to a trio of non-descript
bottles from Chile and Australia,

2 fresh mandarins

10 02. frozen pound cake

% c. rum, brandy or cognac
28 oz. mincemeat

1% c, whipped cream

Grate orange then peel and sec-
tion. Cut sections again. Peel and
section | mandarin, keeping the
other in its skin until you decorate
the top of the trifle.

Heat mincemeat, take off bumer
to cool, then add X c. alcohol.

Cut frozen pound cake in 4-inch
slices.

Whip cream, adding a Tbsp.
white sugar and a 4 tsp. vanilla.

When custard is cool, fold in half
of the whipped cream.

In a large, clear bow] layer cake,
sprinkle with brandy; mincemeat;
orange and mandarin picces; then
custard mixture. Make sure to end
layering with custard mixture.

Top with remaining whipped
cream.

After covering and chilling the
trifle for 24 hours, decorate with
mandarin sections and a sprig of
holly (in the centre).
