Add the chicken and sauté over medium to high heat for 4 to 5 minutes. Add water. Bring to a boil, add rice. Cover, remove from heat, let stand 5 minutes until liq- uid is absorbed. Apricot Streusel Bars 12 oz. dried apricots chopped % c. granulated sugar (1) % c. water 2 c. all-purpose flour % c. granulated sugar (2) % tsp. baking soda % tsp. salt lc. chilled butter 4 ¢. coconut flakes % ¢. quick cooking oats 4 c. chopped pecans or hazelnuts Method: In a saucepan combine the apricots, the sugar (1) and the water, sim- mer, stir gently until nice and thick. Set aside. In a medium size stainless steel bow! mix together the flour, the sugar (2) the baking soda and salt. Spread the apricot fill- ing over the base evenly. Sprinkle on top the saved flour mixture. Bake for 20- 25 minutes more, on the middle rack. Cool completely before cutting. Makes 32 bars. Finally, a family favorite. You may use fresh or frozen blueberries in this fast and tasty recipe. It is a version of the sponge cake formulas. Try it.
