Vancouver, V7M 2H4 North Shore News ' LIGHT CHRISTMAS _ FRUIT CAKE 1% cups seedless raisins 1% cups thinly sliced citron peel 1. cup slivered almonds -% cup glace cherries, sliced 2% cups all purpose flour 1 tsp. baking powder % tsp. salt 1 cup butter 1 tsp. vanilla 1 tsp. almond flavoring 1 tsp. grated lemon rind 1% cups granulated sugar 4 eggs, well beaten: 1% tbs. lemon juice. Prepare ‘fruits and nuts and set aside. Sift flour, baking powder and salt. Sprinkle ‘half cup of this ‘mixture over prepared fruits and nuts, toss lightly to coat well. in flavouring -. and’ lemon rind. Gradually stir in sugar, - each addition. Add _ well _ beaten eggs and beat well. Add dry ingredients alter- natively with prepared fruits and ‘nuts, folding in ‘gently until well blended. Lastly stir - in Iemon j juice. Spread batter in —pans which have been lined with three or four thicknesses ‘of brown paper, greasing inner layer next to cake.
