In response to all those wistful calls and letters, here is the widely-known, perfect solu- tion to problem pastry. If yours tears, crumbles, sticks and cuts like an inner-tube, this is the answer. It has to have pastry flour, and it has to have lard. Apart from those two pre- requisites, there’s nothing to it. For years I imposed on my classes the traditional methods that rely so heavily on “feel” and a “light hand,” and though some of the men who tried so hard suc- ceeded, many gave up and compromised with the pre- mixed or frozen type. These misconceptions can be a major obstacle to pro- viding older people with food they enjoy that is also nutritious, says Gloria Johnson. She's a registered dietitian and nutritionist who consults with skilled nursing facilities and the California State Department of Social Services in Sacramento. “Most of us don’t cat just to nourish our bodies,’ Johnson says. “We cat for social and psychological reasons.” She says many older peo- ple lose their appetites when they “suddenly find they have no meaningful social reasons for having mcals — because they no longer have to prepare meals for a fami- ly, or they don’t have to get up to go to a job.” It then becomes important to discover cucs_ that stimulate older pcople’s ap- petites — cues that are highly individual. It’s also important to find out what foods are socially significant. The foods pcople associate with a sense of well-being are based on their background, Johnson says. Some people want meat and potatoes at every meal. For some, ethnic food is ac- ceptable, for others, a turn- off. “Some pcople have a positive association for white bread, but not for whole wheat.” Older people often will ac- cept whatever is served “because they want to be agrecable. But they may not eat it because it just isn’t ap- petizing to them.” Asking questions about food preferences may not help, she adds, so you're bet- ter off including older family members in meal planning and preparation. I know it’s a lot, but don’t try to do half in this case. Now cut into it, with knives, pastry cutter or hands (my preference) a pound (0.5kg) of lard.
