Along with brother Philippe and chef Joseph Lassaya, Segur will bring North Vancouver a slice of Gallic dining with what is notionally being called Bistro “Dhez Michel. Expect an opening in mid- March. Expect also a seafood- focused menu and a wide variety of reasonably priced tapas-style dishes. Lassaga is currently devel- oping the bistro’s menu, which will aim at dinner entrees in the $15 to $20 bracket. Readers paying attention will know that Lassaga has numerous connections to Segur’s new venture. One of the Goodfellas crowd, he is currently the executive chef for its original downtown location and was same for the North Vancouver branch. He will apply himself full- time to the Bistro Chez Michel post as of March 1. Lassaga was also head chef at Chez Michel from 1979 to 1989. The Goodfellas move rais- es many questions for Segur. Most pressing of which is: DINING —— Chez Michel to open in NV How will he make a go of the Esplanade location where two previous experienced restaurant Operators have tailed? Well, for starters, Sewur is a second-scorey nian all the way. After ovo decades, Chez Michel continues to thrive in its upstairs West Vancouver location. And his focus in the new jocation will be on three key areas: @ price — which was previ- ously too rich for many; B service —- delivery of which was uneven at both Goodfellas and Vivace!; B food quality — which has likewise been inconsistent. Segur has always wanted 4 patio. His West Vancouver location offers no such option now or in the future. The old Goodfellas venue offers one of the best patios in the cv. Second-storey and ali. But fear not, Chez Michel fans. Your man Segur will remain at the helm of his West Vancouver restaurant. Brother Philippe will take the reins of Bistro Chez Michel along with Lassaga.
