By MICHAEL BECKER News Reporter Two years ago Frenchman Fran- cis Beauvalet, a former aeronautical engineer, perfected a counter-top machine that puts out a 400-gram serving of hot french fries in a sizzling 60 seconds flat. The new technology, in essence a self-contained, smokeless and odorless automatic deep fryer, ups the ante in the competitive fast food industry. The machine is making the leap into the North American market thanks to the vision of Laurent Goldstein, president of West Van- couver’s Challenge Marketing Company Inc. (CMCI). The marketing company holds the exclusive marketing rights for Canada and the United States for the Snappi-Fries system. CMCI president Laurent Golds- tein says the machines will appeal to convenience stores and pubs without kitchens. ‘‘We have noticed convenience stores going into the fast food concept with microwave sandwiches and hot- dogs. One product was missing — french fries.”” Before Snappi Fries, french-fry production had of necessity re- mained inextricably linked to a kitchen. Goldstein says the machine he leases and other similar self-con- tained deep frying units have been used in European convenience stores for the past few years, He searched for similar equipment from North American producers, but came up empty-handed. The former Parisian travelled to France in February determined to see patrons of North American corner stores munching away on french-fried potefoes and other fried foods along with their mi- crowave-warmed sandwiches and slushy soft drinks. ‘I was aware of four manufacturers and I definitely thought this was the best product. It’s the most ver- satile and it’s almost maintenance free,’ he said. The compact, automatic deep fryer incorporates a condenser, four fans and six filters to func- tion fume free. Tom Grande, sales territory manager for McCain, a major supplier of french fries to the local food industry, terms the machine ‘‘innc zative.”’ “It’s using a french fry we've specially designed for machines like this. The fries are super pro- cessed. They are blanched extra long to enable a quick cooking time and crispy taste. We’re leading the technology to come up with french fries that will taste this good in 60 seconds."
