So when you phone to ask me where to buy that kind of beans, or what temperature the pumpkin-fluff pie would cook at, or send me your entry for the Recipe-of-the-Week, I can only turn you off, or make a wild, and unfair, guess. It’s a pleasure to me to talk with anyone who finds enter- tainment in cookery, but ! hate to disappoint such enthusiasts. This is my stuff. It’s about fruit, today, something I don’t have much to do with, as a rule, maybe because apples do poorly in the snow. For strawberries | have confessed to you a pas- sion, but my _ relationships with most other fruits are so lukewarm as to be quite bor- ing. But there are glimmerings of a romance between me and Japanese 20th Century pears. (i mean, really, — what a handle! Like calling the newborn baby Algernon Marmaduke Humphrey Whatsit.) One of those mysterious packages that turn up at the News office every once in while contained three of them. Huge things they are, smooth, hard, iden- ticaly pale yellow, nestling in | had been aware of Chinese pear-apples, as they call them, and had tried one once. It was certainly juicy, and certainly crisp, but it fail- ed to light a flame in my heart. These from Japan, however, such uniform monsters, quite without blemish, look as though they were produced by some neat- ly programmed agency besides a tree. In fact, they are indeed the kitchen ranger by Eleanor Godley cute little coats woven of soft white plastic foam. I was in- trigued. They are picked by hand. Yet for something so coddled from birth, they have remarkable staying powers, and if refrigerated will maintain their handsome looks and delicious eating qualities, literally for months. For they are delicious. Fresh, crisply tender, full of cool sophisticated unsweet flavor, and amazingly juicy. When cut, surfaces must be wiped with lemon juice or a fruit preservative to discourage discoloring, but this in no way retards their seductiveness, We were having that curry the day they arrived, and a great contribution to the pleasure of the condiments was made by a dish full of short sticks of pear. Their chilly succulence was a perfect foil to the pungent curry. Not often do I bother with lunch for myself when I am home alone, but some left- over fried chicken tempted me ta dice it, along wih half a day Japanese pear, and mix it with some walnut pieces, mayonnaise and mango chutney. What a salad. It would make a great company dish, with some green grapes included, and perhaps tiny scraps of pimiento for color. Enjoy.
