the magic of the islands
— on the North Van
waterfront.

Tomorrow and Sunday,
the Caribbean Days Festival i is
back at Waterfront Park for
its 12th year.

Hunta, Tropical Breeze and
more.

Caribbean treats.

serve them. In Jamaica,
Barbados, Trinidad and
Tobago, an entire culinary art
grew up around “Jerk.”
There are many Jerk season-
ing combinations in the
islands — this one uses hor
Peppers, onions, ginger and
allspice.

3 chile peppers, seeded,
diced

2 onions, finely chopped
l-inch piece ginger root,

peeied, chopped

4 Thsp. chile paste

Kc. oil

1 tsp. allspice

1 tsp. dried oregano

4 Tbsp. water

3 Ib. pork fillets

Place the peppers, onions,

and ginger in a food processor

and pulse until smooth. Add
the chile paste and oil and
blend. Then add the allspice,
oregano, and water. Rub this
mixture all over the pork.
Marinate overnight. Barbecue
pork fillets or roast in a 400
degree oven.

Pigeon Peas and Rice

4 Tbsp. oil

1 Tbsp. brown sugar

1 Ib. beef, cut into cubes
8 oz. white rice

4 oz. pigeon peas (fresh)
4 oz. coconut milk

Salt and pepper to taste

Heat the oil in a large pot.
Stir in the brown sugar until it
has almost caramelized. Add
the beef with a little water and
simmer, partially covered,
until the meat is half cooked.
Add the remaining ingredi-
ents. Simmer for 20 minutes.
Cover and set aside for 15
minutes before serving.
