This is another easy recipe. The
method is the same but the gravy is
different. .

Pot Roast With Tomato Gravy
i pot roast (as above)

1-28 oz. tin stewed tomatoes

1 cup strong biack coffee

water

6-8 carrots, cut in 4’* pieces

4 medium onions, quartered

% cup flour mixed with enough
water to mske a smooth batter
seasoning (o taste

Here, again, it is unnecessary to
brown your roast. Place meat in a
deep pot with a tight lid. Add
tomatoes, coffee and enough water
to bring the level up to the top of
the meat. Bring the mixture to a
boil on the top of the stove and
then place in your oven, set at
250°. Total baking time will be be-
tween 6-8 hours. About halfway
through, add carrots and onions.

When both vegetables and meat
are very tender, remove to a hot
platter and thicken the gravy with
the flour mixture, a little at a time.

Taste and season.

If you wish to make this roast
ahead of time, do not add the
vegetables. Instead, steam them in
a little water and add the cooking

water to the gravy.

This roast is especially good with
buttered acodles topped with a
heavy dusting of grated Parmesan
cheese and freshly cracked pepper.

¢ Taipan Hoisin Sauce: What
this stuff does for chicken is in-
credible. It’s a thick sauce, ideal
for painting on the skin as your
chicken bakes. 1 marinate the bird
for a couple of hours in the sauce
and then add more, every half
hour or so, while it cooks.

* Golden Dragon Black Bean
Sauce: This has garlic in it and is
downright addictive! To use as a
“gravy” with stir fries, mix half
and half with water and thicken
with a dit of cornstarch. Mostly, 1
use it on steamed broccoli — about
a tablespoonful is right for six ser-
vings. Butter the hot broccoli, add
the sauce, put the lid back on the
pan and shake vigorously. 171! bet
