RECIPE WINNER
Jalmon in pas

WHOLE SALMON
IN PUFF PASTRY
(serves 10-14)

8 or 9 Ib. salmon
(incl. head and tail)

2 lb. fresh or frozen spinach

3 large yellow onions _
“% cup white wine™ —
‘A cup.chicken stock
cup whipping cream
4 Tol. unsalted butter
4 Toi. plain flour

2 lb. prepared puff pastry

1. Filet and skin the salmon.
(Approx. 5 Ib. will remain)

stir in cream until sauce
reaches desired consistency.
