Food Runners, the Vancouver Food
Bank’s recovery program thet collects
surplus prepared and perishable food

cooking schools and redistributes it to
agencies that feed the hungry.

Here is a recipe from Taste of
Vancouver by Philip Mitchell of Cafe
Norte in North Vancouver.

Dungeness Crab and Red
Pepper Chowder

%¢. butter

1K c. diced red pepper

% ec. flour

2 quarts seafood stock (*)

1 tsp. black pepper

2¢. whipping cream

1c. sour cream

1 tsp. salt

1% ¢. diced blanched potatoes

1 Dungeness crab, cooked and shelled

' 4e.each minced parsley and diced red

pepper . .

Saute pepper in butter in large pot
over medium high heat, stirring until
soft. .

’ Sift flour over peppers, cook 1

minute. Whisk in warned stock, adding
black pepper. Bring to simmer, cover
and cook 30 minutes, stirring occasion-
ally.

Ina bowl, whisk together the cream
and sour cream, Ladle 2 cups warm
stock from pot und whisk into cream
until smooth.

Return mixture to pot, whisking
slowly.

Add potatoes and simmer 15 min-
utes, uncovered.

To garnish, chop crabmeat and toss
with parsley and red pepper.

Ladle chowder into bowls.

Top each serving with generous
spoon of crab-mixture.

Serves 8.

(+) Crab shells are used to make the
stock for this chowder.
