When it arrived, I found that the shrimp, clams, mussels and Jobster were still in their shells and in broth. Although [ watched the Spaniards closely, E did not discover the secret of removing the shells without getting my hands wet and dripping the soup halfway up my arms. Last week, I visited a restaurant where the specialty was stuffed quail. My experience with the zar- zuela had unnerved me and f was afraid to order the quail, not hav- ing the foggiest ideas of how to eat it. No one else was cating quail, so I could not observe. There are also two things to watch out for in eating quail: bones and buckshot.
