Serving staff is turned out in classic black and white. But Le Bistro is far from formal. With brother Philippe presid- ing, seriousness is applied to quality control; elsewhere is the joy of dining. The food mean- while is not Italian. That might be the ticker here. French yes, but French Segur- tentious. No overly rich sauces or high priced dishes. Instead, classic bistro fare: Steak-frite, par example. Six- ounce New York; grilled how you like it; and accompanied with a side of excelicnt french fries and nightly vegetable selection — grilled red bell pepper, zucchini, acorn squash. The dish is one of Le Bistro’s Dinner Express selec- tions designed for theatre- goers or otherwise impatient diners. Ready-in under 12 minutes. For the less hyper, main entrees ($12 to $18) range from Chicken Penne to Scallops Normandie Gratinee and Veal Forestiere. Starters are modestly priced ($4 to $7.50) and include such simple classics as French Onion Soup, Steamed Mussels and Escargot Nicoise. Nothing too extravagant from chef Chef Joseph Lassaga, who was head chef at Chez Michel from 1979 to 1989 before departing to pursue a host of other dining adventures.
