MIGHT I suggest an Austrian approach to win- ter? Lederhosen at the ready. A soundtrack of com- plex yodeling, a goulash, charcuterie, a rousing ragout and the best of the wurst, as it were, to chase grey skies and damp days from the soul, Something robust and Teutonic delivered with exacting Germanic einstellung. That would take us to a kitchen with extensive culinary range and much fine cuisine expertise, La Toque Blanche, for example, one of the North Shore's best restaurants in one of its more obscure loca- tions. And it would reunite us with Peter Wieser, owner and head chef of La Toque, dexterous caterer, and tutor to a whole generation of Lower Mainland chefs. The Austrian theme is, after all, Mr. Wieser's idea. Aided, of course, by his charming wife and tellow La Toque personality, Sharman, whose line of bottled La Toque Raspberry Vinaigrette has been selling by the case-lot from various outlets in West Vancouver and clsewhere. But that is another _story for another time. Chef Wieser kicked off Austrian week at La Toque at the beginning . of February. It was initially sched- uled to run for a week, but was promptly held over for another week following the enthusiastic response to La Toque’s first-class Austrian excursion. The Austrian tour gas- tronomique featured such European crowd-pleasers as Gulaschsuppe, Kalbsgulasch mit Nockerl and Salzburger Nockerl (ab 4 personen und mehr, of course), For those more comfortable with syllable-reduced diets: Goulash Soup, Veal Goulash and Salzburg-style Soufflé. The Austrian diversion also proved great tonic to La Toque’s . kitchen. Chef Wieser and his staff played to packed houses of Austro- Hungarian food fans, delivering the substantial meat and dumpling- based dishes with the finesse that has been a signature of La Toque : for the past eight years. Table Hopping’s Austrian expe- rience included Frittatensuppe (Consommé), a superb beef stock, . presented with finely sliced savory crepes, followed by a hearty See La Toque page 21 RES!
