By the end of 1986 it is estimated that one in every three Canadian households will own a microwave oven and that within the next two and a half years about 50 per cent of households will have a microwave in the kitchen. This represents a dramatic change in the way we prepare our meals and there is a tremendous need on the part of consumers for informa- tion on how best to use this new cooking technology. While microwave cookbooks often recammend covering foods with plastic wrap to retain moisture and promote more even cooking, it is important to note that all plastic wraps do not per- form equally well. Use a plastic wrap that has a softening point above the boiling point of water (212°F/100°C). MICROWAVE TIPS When using plastic wrap in a microwave oven, helpful tips are: * always turn up a small corner of the wrap to allow excess steam to escape. * never pierce or slit the wrap; this may cause it to split during cooking. e avoid steam burns by peeling the cover toward you Starting from the far side as you remove it from the dish. never use plastic wrap with a microwave browning unit turned on or when cooking in a conven- tional ar convection oven. There are hundreds of uses for a microwave oven — here are a few helpful hints: ® Heat Baby Food: Remove the metal top from jar, cover loosely with wrap and mi- crowave for approximately one minute at medium. Remember to test the temperature before giving to baby. ® Day-Old Bread: If a loaf of bread is a few days old and not as fresh as you’d like it to be, simply wrap it tightly in wrap and heat in microwave oven at high for a few seconds. It'll be fresh and moist. * Leftover Coffee: Don’t throw out the leftover coffee you made in the morning — a cof- fee liqueur makes a delicious even- ing treat. Simply add a splash of your favorite liqueur, cover with wrap and microwave at high for to | minute. Top with whipped cream, PLAN MEALS AHEAD ° Make-ahead Dinner: Make your Wednesday dinner Sunday afternoon. Prepare your main course foods, wrap and freeze, When you want to serve the food, take it out of the freezer, pop it directly into the microwave oven and heat through. © Breakfast-to-go: Scramble two eggs in a small serv- ing bowl, covered with wrap: stir once or twice during cooking OR scramble the eggs and fry the bacon the night before, place on a dinner plate and cook cover tightly From Page 13 wood removed and be reduced in size.
