l cup grated mozzarella cheese
diced, mixed Italian herbs

Brush the pizza crust with olive
oil. Sprinkle with the olives, capers
and tomatoes. Top with cheese.
Dust with seasoning. Bake at 450°F
until cheese melts and crust is crisp
— check directions on package for
precise timing.

Be sure that you crimp the edge
of your pizza shell to keep the
cheese from running over the edge.

Set close to the bottom of your
oven so that the crust will brawn
but the cheese will not.

This will serve one to two peo-
ple. I tried it washed down with
Bass dark ale. Simply magnificent.
