Wieser, of course, previ- cusly spent eight years in Wesz Vancouver establishing his La Toque Blanche restau- rant as one of that munici- pality’s best restaurants. Not on his own, of course. His bubbly and con- genial wife Sharman was a key ingredient i in La Togue Blanche’s success. Combined with his cater- ing expertise and his work as an instructor in Vancouver Vocational Institute’s highly -segarded chef training "course, Wieser was a one- man gastronomic industry. But the restaurant trade is hard on the system. : In 1995, the Wiesers ~ needed a breather. Wanted to have a few nights off; enjoy a weekend lecting » someone else doing the cooking and serving. But this Wieser guy was born to cook. It is what he is all about. After he returned from Germany, Wieser began to look around for another restaurant. Not a full-fledged white linen and four-course table dhote operation. He’d done that. No, he wanted some- thing a little more free wheeling, a little less struc- tured. Something casual. An eat-in-take-out kind of place. But done with some style. He looked at many places on the North Shore. Some were too old; some too small; some too expensive; some too far gone. The walls are finished in a soft caramel tone and dec- orated with the works of local artists. Tables are cuv- ered in brightly colored Aztec-style table clothes. Illumination is courtesy of elegant track lighting, which gives way to candle light after dark. And from the Gourmet’s open kitchen comes wonder- ful examples of the new bistro Wieser. La Tague sans tux and tie. Casual continental. That gocs for pricing too: appe- tizers and soups $4 to $9; sandwiches $5 to $7; entrees $8 to $17. Try some of Peter's Carrot and Ginger Soup. It’s a deep orange criss- crossed with a lattice of cream. The sweet savory carrot stock is rich with cream and fitelled with a subtle ginger-root heat. Top with a sprinkle of fresh pars- key and mop it up with slabs’ french bread. You could stop right there if you wanted. But there is much more, and it’s all simple appealing fare. Caesar salad prepared with a dash of the Wiesers’ patented Unlimited Gourmet Foods Inc. vinai- grette; Fetruccini with salmon and shrimp in a dill sauce; New York Steak fin- ished in a brandied pepper- corn sauce; Chicken Breast with sesame seed crust and honey-lemon butter. And an excellent Salmon Filet that is grilled and pre- pared in a simple sauce of sundried tomatoes, shallots, lemon and olive oil. On Table Hopping’s recent visit, the Casual Gourmet had only a few wines by the glass and a couple of good beer avaii- able. But selection should increase as the Wiesers settle in and iron out those awk- ward opening restaurant wrinkles. Service is also very infor- mal, But don’t be fooled by the term casual.
