Finely chop the green pep- per (it may be omitted) and carrot, and add, continuing to cook for a few minutes, stir- ring everything together. Pour in clam nectar and hot stock, either chicken or fish, and preferably home made, and bring to a boil for five minutes. Lower heat and add potatces which have been cut into ¥-inch dice. (you may substitute 4 c. raw rice). Simmer for 15 minutes with the lid on. Add drained, canned clams, whole scrubbed live clams, or a combination of the two, and the cream (you may substitute skim milk, but it won't be as rich), and simmer for five minutes more. Add salt and pepper to taste, then thyme, paprika and parsley just before serving. Serves 6-8.
