The following is a list of basic hints. © Cover foods to hold moisture in and speed cooking. © Stir foods, turn large pieces over, or rotate food dishes to distribute heat evenly. © Arrange foods in a doughnut shape, with thinner parts to the centre, or with the centre empty. ¢ After removing foods from the microwave, let them stand to finish cooking. These tips come from Chef Blake Emerson Swihart, a Culi- nary Institute of America-trained chef, nutritionist and food consul- tant who enjoys developing quick and easy recipes for home cooks. * Frozen vegetables cook beautifully — and fast — in the microwave. They contain moisture and can be micro-cooked without adding water. This helps retain water-soluble vitamins and miner- als, as well as color, flavor and texture. And they save extra time because they’re ready to cook right from the package. ® Always undercook if you aren’t sure how long something will take in the microwave. You can always increase cooking time Know your potatoes THEY APPEAR on our table all the time but how much does the average consumer really know about potatoes? Here are some potato facts and figures. e Canada produces approx- imately six billion pounds of potatoes each year. * Canada exports over two billion pounds of potatoes to over 28 countries each year. * Canadians consume about 122 pounds of potatoes per person a year as fresh, frozen, French fries, dehydrated and canned potatoes. . e Three to four medium potatoes equal one pound. * Canadians eat about six pounds of potato chips per person a year. ¢ Fresh potatoes are the largest moving volume vegetable at retail. © Potatoes grown on Vancouver Island and Newfoundland can only be consumed on those islands. This is to prevent the spread within Canada of nematode infestation and potato wart disease. © Canada imports potatoes only from the United States for plant health reasons. The amount of potatoes imported is roughly equivalent to the amount of Cana- dian potatoes exported into the United States (about 300 million pounds annually). e There are about 77 licensed varieties of potatoes available to growers. * Potatoes are graded according to size, shape, maturity and rela- tive freedom from dirt, injuries, blemishes and disease. They are not graded for cooking quality.
