While most of the cham- pagne purchased here is quaffed between December ! and New Year’s Day, new sales figures from Moer & Chandon reflect a 13% inerease in provincial cham- pagne sales from January to August this year. “Champagne is moving away from being simply a cele- bratory deverage to becoming an everyday indulgence,” says Mario Evangelista, of Corby’s, the representative for Moet & Chandon. To prove their point, Moct and Chandon have invited cight chefs from the premier hotels in B.C to participate in Champagne Takes on the Canadian Wilds. They have given each chef the challenge of creating an hors d’ocuvte with wild salmon or wild & Chandon Brut Impenal. “We want to give people an opportunity to purchase champagne as they would a glass of wine or cocktail, not just On special occasions,” say's Evangelista. At the Pacific Palisades, their new chef, Denis Blais (formerly of The Prow) will feature a wild mushroom and goat cheese brioche in the Montercy Lounge and Grill during the months of November and December. Robert Le Crom of Hotel Vancouver has created a smoked salmon and crispy potato Napoleon. Louis Gervais from the Sutton Place will fearure a wild rabbit marjoram brioche.
