Panfried Squid with Sambuca and Sage Vinaigrette
2 tbsp, virgin ofive oil f cup fuhenne of spring
1 thsp. fresh sage (chopped fine) veretables
1/2 tsp. black pepper corns (cracked) 1.5 thyp. white vinegar
Soz. cleaned and sliced squid tubes and tentacles | oz. Sambuca
Heat 10" saute pan on high. Add olive atl, saute squid for approx. 30
seconds, flame with sambuca, add vinegar and remaining ingredents.
Cook slightly until squid is just cooked, season to taste. Remove and
serve immediately. Do no over cook. Bon Appetit!
