Fact is, we’re becoming much more aware of our bodies — and of course, whal we put into them. Let’s take a closer look at salt and how it works in your body. Salt, or sodium chloride as it’s technically known, has been used for thousands of years as a flavoring and = seasoning agent. We use it at the table to add zest (it helps to bring out natural flavors). [t’s also us- ed in many processed foods. it keeps bread from tasting bland and cheese from tasting bitter. Food manufacturers also use salt to improve the tex- ture, color and consistency of many products and to preserve food items which would otherwise spoil. It prevents cheese from fermenting, for example, and inhibits the growth of bacteria in processed meats (such as ham, bacon and sausage) and cures many other meat and fish products. Salt is also a natural ingre- dient .in many foods. Meat, fish, poultry and dairy pro- ducts are high in natural sodium, while most fresh fruits and vegetables have a low sodium content. Table salt, which is about 40 per cent sodium, represents about one-quarter, of our daily salt intake.
